Shout out to Bailey! She was one of our amazing health coaches. She told us about the Siete tortilla one day and how she puts some avocado on top. This was her suggestion for a breakfast that she had herself. It's a super simple recipe. It's become my mom's favorite breakfast and she has had it every morning since.
Ingredients:
1 Siete tortilla
1/2 Avocado
salt
squeeze of lemon juice
Directions:
Toast the tortilla in a skillet for a minute or two, and then flip over and toast another minute or two.
Mash half an avocado and spread on the tortilla.
Sprinkle with a little salt and if you like, add a squeeze of lemon juice.
You could add a few diced onions as well.
Serve with turkey bacon, and breakfast is served!
