Ingredients
2 lbs - Ground Turkey
1 - Onion diced
1 - Bell Pepper diced
1 - Bag of frozen Cauliflower Rice (cooked)
1 - 7 ounce can of diced green chiles (doesn't have to be drained)
1 - 2 cups - crushed siete tortilla chips (sea salt or lime)
Montreal Steak Seasoning to taste (or any of your favorite seasoning)
Instructions:
Preheat oven:
Meatloaf - 350°
Meatballs - 400°
1,) Cook the frozen bag of cauliflower according to instructions on the bag.
2.) Chop all the veggies
3.) Add the tortilla chips to a ziploc bag and crush them with a rolling pin. You could also put them in a food processor if you would rather.
4.) You can start adding everything to a large mixing bowl. Add the turkey, veggies, bag of cooked cauliflower, green chiles, crushed tortilla chips, and then season with the seasoning of your choice.
5.) I like to put gloves on and mix everything by hand. Mix until everything is combined.
6.) Meatballs: Get a couple of cookie sheets and line with parchment paper. Form into meatballs. I used a cookie scoop. Bake for 15-20 minutes at 400°
7.) Meatloaf: Pour the mixture into a casserole dish and bake for 1 hour at 350°.


When my mom started this program, they told her that she needed to have a portion of animal protein and at least 2 servings of veggies at every meal. So this recipe came about because it was an effort to get a lot of veggies in at once. In the beginning, we started with turkey and chicken. It wasn't until a little later that we were able to start adding foods in. Eventually, we were able to add in beef and pork as well.
