Quick Chicken Soup

Recently I came down with a bad cold. My mom whipped up this quick and easy chicken soup on the fly, and it turned out so yummy.


Ingredients:


2 quarts of chicken broth

3 celery sticks chopped

3 carrots sliced into coins

1 small onion

6 small purple potatoes sliced into coins

1 pint of homemade canned chicken or 2 chicken breasts shredded



Directions:


1.) Pour the chicken broth into a large pot.

2.) Add the celery, carrots, and onion.

3.) Let it come to a boil, and then add the potatoes. Let them cook until fork tender. You can add the chicken as well to heat through.

4.) The soup may or may not need any salt or pepper. Taste the broth and season accordingly.

5.) Serve and Enjoy for breakfast, lunch or dinner!


Note: Purple potatoes are optional. Feel free to add any vegetables that you like.
