This recipe has so many variations all over the internet. It's really such a simple and forgiving recipe. You can adjust it to your own taste. It can be made with an ice cream maker. It can also be made if you don't have an ice cream maker. I'll tell you more about that below.
Ingredients:
Basic Recipe:
1.) 1 can of full fat coconut milk
2.) Sweetener -1/4 cup of maple syrup; or use a granulated sweetener of choice. You may have to play with the measurements on that. We sometimes use a blended sweetener that comes in packets. It might only take 1-3 packets.
3.) 1 tsp of vanilla
Variations:
Chocolate - Add 2 tablespoons of cocoa powder
Mint chip - Add 1/4 tsp of mint extract, and add in lily's chocolate chips
Strawberry - Add in 1/2 cup of fresh strawberries
Create your favorite flavors.
Directions:
1.) Put all ingredients in a blender or nutri bullet.
2.) Pour into your ice cream maker and let it churn.
When it comes right out of the ice cream maker, it's more like a soft serve.
You can let it sit in the freezer, but you will have to let it thaw a bit before you can serve it.
This tip comes from Chocolate Covered Katie:
If you don't have an ice cream maker, you can freeze the mixture in ice cube trays and then blend them in a high-speed blender or food processor.
