Guacamole Inspired by Chipotle

Chipotle is one of our favorite places to eat. It's very easy to customize a plate of food that works with the diet. Their guacamole is one of the best, so I tried to replicate it at home, and this is what I have come up with. The only addition I have made is garlic salt. I've made it many times, and everyone seems to like it.


Ingredients:


3-5 ripe avocados

1/2 cup - red onions diced

1 - jalapeno, seeded and diced

a handful of cilantro -chopped

4 tbls. - lemon juice or lime juice or both

Garlic Salt - to taste


- This recipe is very forgiving. I usually don't measure. I just chop up as much as I think I will need depending on how many ripe avocados I have. Feel free to adjust the measurements. if you want more or less of anything, that is totally fine.


Directions:


Get a medium sized bowl to put all the veggies in as you dice them.


Dice the red onion and put it in the bowl.


If you like the spice of the jalapeno, you can leave the seeds in. If not, go ahead and cut out the ribs and seeds, and then dice the jalapeno and add it to the bowl.


I like to rinse the handful of cilantro and then pat it between paper towels. Then I can chop it up and add it to the bowl.


Scoop out the avocados and mash them. I like to mash them right on the cutting board using a fork. Then I add it to the bowl and mix everything together.


Add the lemon juice and garlic salt to taste.


Serve with Siete chips or use as a garnish on so many dishes.
