Nina's Vegan Aquafaba Butter

I recently found this recipe after searching for aquafaba butter. It looked like an easy recipe, so I decided to give it a try. I'm so glad I did. It's very close to real butter. It's very creamy, and melts like real butter. There are a couple of unusual measurements, so I just had to do the best I could to get as close as possible.

Ingredients:


3 tbls - aquafaba liquid (chickpea water)

7 tbls - coconut oil melted and cooled (use refined coconut oil if you don't want the coconut taste)

4 tsp - olive oil

1/2 tsp - apple cider vinegar (Original recipe called for 2/3 tsp)

1/4 tsp - salt (original recipe called for 1/3 tsp)


Directions:


In a small bowl combine the coconut oil and olive oil. Set aside.


You will need a narrow container such as a pint size mason jar, or a wide drinking glass.


Pour the aquafaba liquid in the glass or jar. Add the salt and vinegar.


Start blending with an immersion blender/stick blender.


While blending, start pouring in the oil mixture slowly. It might take a couple of minutes to make sure all of the oil has been blended together. It should start to thicken up like mayo.


Pour it into a container or bowl, and place in the fridge to set up. DO NOT COVER IT.


Leave it overnight to solidify. Once it's solid, you can cover it if you like.


Enjoy on sweet potatoes, or veggies!
