This is a really yummy recipe for granola. There are so many options for granola, and this is a pretty easy recipe. I didn't change much about it, but I will explain more further down in this post. Be sure to follow the link above if you would like to see the original recipe.
Ingredients:
1 cup cashews, unsalted
1 cup almonds, unsalted
1/2 cup pecans, unsalted
1/2 cup unsweetened shredded coconut
2 tsp cinnamon
1/2 tsp salt
3 tbls chia seeds
1/4 cup coconut oil
1 tsp vanilla
1/2 cup maple syrup
Instructions:
Preheat the oven to 325 degrees.
In a food processor, blend all nuts, coconut, cinnamon, and salt until everything is combined and the nuts have broken down. It's ok if you have a few larger pieces of nuts left. It's up to you if you would like large pieces or smaller pieces.
Pour the nuts into a bowl and add chia seeds, oil, vanilla and maple syrup. Stir until combined.
At this point, you can do this a couple of different ways:
1.) Pour onto a parchment lined baking sheet, and press down flat to about a half inch thick. This will help make big clusters when it's baked.
**When I took this out of the oven, it seemed very sticky. Even after sitting for a while to cool, it was still sticky. It was delicious, but sticky. So we tried something different the 2nd time. My sister gave us a tip. She said if we spread out the mixture, it would bake easier and maybe dry it out a little bit more. So we tried that.
2.) We put a spoonful of the mix on the baking sheet as if we were making cookies. Then pressed each one down to flatten it a little. While it baked, it spread and baked together. when the time was up, we turned off the oven and let the tray sit in the oven for about 10-20 minutes. We were hoping it would dry out mixture a little more.
Whichever way you decide to try, you will want to bake the granola for 22-26 minutes or until golden brown. I baked it for 26 minutes. On the 2nd try, I also baked it for 26 minutes, and then turned off the oven and let the tray sit in there for another 10-20 minutes. Keep checking on it and take it out when it gets to where you want it.
Let cool and then break it up into pieces. Store at room temperature.
We like to eat granola as cereal in almond milk, or you can sprinkle it on yogurt, or just eat it as a snack like you would a granola bar.
This is so good and so simple. Just the granola and some almond milk. YUM!
This is another delicious option. I used coconut milk yogurt, a little sweetener, and vanilla for flavor. I topped it with blueberries and the granola.
