Welcome to "Can I Eat This"!
This blog was created to document and share recipes that I have searched for to help my mom get through this new way of eating. Well, new for her, and us.
She started a program to help her get control of her type 2 diabetes. It has actually been great for all of us. Our family has decided to join her in this way of eating, and it has been very beneficial.
When the program started, many foods were eliminated and so we had to be very creative with meals. I relied on the internet and the wonderful food blogs out there. Not everything was going to be exactly how we needed it to be, so I would have to alter a few ingredients here and there. That is mainly why I started this blog. I wanted to share with others who are on a similar program. I wanted them to have access to a lot of recipes that they can eat. It can be a little bit stressful to figure out what you can eat with limited ingredients. It's really nice to have them all in one place with all of the adjustments already made.
I will be adding links to the original recipes so you can see where I got them from and give credit where credit is due. I'm so thankful to have access to all these recipes, and I want to share that with all of you.
